I AM the "Neena Marston" of the Potato Puff recipe and I did NOT invent this recipe!, just to set the record straight. I got a congratulatory letter from "Taste of Home's Quick Cooking" magazine, a complimentary magazine and a free copy of "1999 Quick Cooking Annual Recipes" book. I wrote to them and told them that I didn't send the Potato Puff Casserole recipe but sent them a very different recipe. They said they were sorry but there must have been a mix-up. Meanwhile, some nice woman out there doesn't even know that her recipe won and I got all the free stuff for it, not to mention having the recipe tied around my neck for the rest of my life and even on the internet! I tried the recipe and I didn't like it. I liked my Ham & Asparagus Casserole far better. Sour grapes? Nope, I just don't like plain old potatoes.

I enjoyed making this side dish. It was so easy. I omitted the salt & the onion & it was very bland. I also added parmesan cheese before baking it. My children didn't like it very much so I probably won't make it again. It was a very good way to use up leftover mashed potatoes though.

Very good. My Mom made a very similar one to this when I was a kid. I substituted the onions for spinach and left out the dry mustard, added some ancho chile powder and paprika instead. I also added parmesan cheese.(sorry I made a few changes!). Super easy.
