This is super soup. I love it. I used diced tomato instead of crushed, use fresh cut up potato instead of hashbrowns and fresh cut up carrots instead of the frozen veg. I also double the chickpeas. So good I make it once a week!

This exceeded my expectations. It sounded rather bland, so I thought I was going to have to doctor up the seasonings. However, I followed the recipe pretty much as written as I figured I could add to the finished product if needed. It didn't need anything extra, it had a really good flavor. I used diced potatoes with onions, fresh baby spinach, and a veggie medley (peas, carrots, lima beans, green beans, corn) instead of just peas and carrots. It took a really long time to get the potatoes tender, maybe because I didn't use the diced breakfast potatoes as directed.

Not my FAVORITE, but a great soup to add to our winter menu. The spinach is pretty strong, but I love the variety of spices that give the soup so much flavor.

We enjoyed this recipe. The only change I made was to use fresh baby spinach at the end instead of frozen. Next time I will try macaroni instead of the hash browns, but they were good for a change.

This went over better than I ever expected! I forgot about the peas and carrots and I didn't miss them. I used slightly less spinach - maybe 9 oz. It looked like alot in the pot and worried me that my family would reject it on appearance alone. However, my meat & potatoes hubby really liked it and so did my picky 5-year old. I honestly didn't think it smelled that good initially but by the time it was served it was fine. Thanks for a tasty, healthy recipe!

I made this with diced canned tomatoes w/ sweet onion since I was out of dried minced onion, otherwise the only other changes was to make 1 1/2 times the recipe, except I only used 10 oz. of the spinach and it was plenty. Also, as per other reviews, I made this in the crock pot a day ahead. Stuck it in the fridge, and re-heated for dinner the next day and the flavors had blended beautifully without any overpowering spinach flavor. The soup was delicious, my kids ate it all up. The only thing I would change is I did not care for the mealy texture of the garbanzo beans in the soup, but I still loved every bite. Just might omit them next time. But it didn't ruin the yummy soup by any means. Also sprinkled a little parmesan cheese over each serving of soup. Yum!

The taste of the soup was great but I would say a whole package of frozen spinach was too much. The spinach really took over the soup in both flavor & texture. Next time I would use 1/2 a package. I also used fresh potatoes.

The first time I had this soup I wasn't wild about it. But it tasted so delicious on the second day. If you're fixing it for company, I suggest you make it a day ahead and then warm it up on the stove when they arrive.

Great the first day. Even better warmed up the next day! I used chicken broth instead of the beef broth and I put in thawed mixed veggies instead of peas and carrots.

Fantastic! I made this and we ate if for several days! Took it to my Family Christmas party, By day two the spinich was not so strong. Great taste! My dad ate 3 bowls!

I just made this for Christmas Eve when my family came over - many don't like Minestrone soup and walked away wanting the recipe! It was great. I cooked it all day in my slow cooker and it warmed us to the bone.

This soup tastes great and is super easy! I added an extra can of beef broth and used canned peas, drained. I used fresh carrots and put them in the crockpot in the beginning. There is no chopping required with this soup! Great for these cold fall/winter days. Thanks for such a great recipe!
