Made this the other night and it is a good soup. I did make a few changes. Couldn’t find garbanzo beans (store didn’t have canned and didn’t have time to soak dry ones), used all chicken broth (that’s what I had on hand), fresh potatoes, onions, garlic and carrots. Forgot about the peas but this turned out really good without them. This would lend itself to any veggies you have on hand and is very hardy. My husband Rick really liked it and he usually wants some type of meat with his meal! Thanks for posting the recipe. It’s always fun to try different ideas on classic dishes. I should have also added that this is even better the next day or two. The flavors are more developed. Last night I reheated it with chunks of baked chicken breast and it was even better. Try it its good.

My family loved this soup! I have been on a mission to get my 19th month old to eat veggies and he loved this! I followed the recipe exactly and just made a few adjustment to the cooking time because we like our veggies tender. I added the peas and carrots in halfway through and cooked it for an extra hour because the chick peas weren't cooked enough. It came out nicely seasoned and delicious!

Very good recipe. Could use a little less spinach and I am not sure I liked the pototoes - would have preferred some type of pasta instead. I used cannellini beans instead of garbanzo since that is what I had and they worked out fine.

I have a picky family but hoped this would work. Unfortunately, it didn't. I thought it was ok, but not my favorite. I even added ham after an initial taste. But kudos for being SO healthy!

This was ok. I had to remove a lot of the spinach, because it just seemed like too much. I also did not care for the texture of the garbanzo beans in the soup. Probably just my personal taste though, as it seems most people on here did enjoy it.

Five stars for easy to prepare and great taste! I added one can of Rotel tomatoes and 1/2 tsp of red pepper because we like spice. Used the whole box of spinach. Cooked it overnight and let it sit all day; flavors had blended well by dinnertime.
