Made this the other night and it is a good soup. I did make a few changes. Couldn’t find garbanzo beans (store didn’t have canned and didn’t have time to soak dry ones), used all chicken broth (that’s what I had on hand), fresh potatoes, onions, garlic and carrots. Forgot about the peas but this turned out really good without them. This would lend itself to any veggies you have on hand and is very hardy. My husband Rick really liked it and he usually wants some type of meat with his meal! Thanks for posting the recipe. It’s always fun to try different ideas on classic dishes.
I should have also added that this is even better the next day or two. The flavors are more developed. Last night I reheated it with chunks of baked chicken breast and it was even better. Try it its good.
