Served with delicious yeast rolls, this soup made a great "busy day" supper. I used leftover mashed spuds in place of the instant mashed. The texture was creamy yet not too thick...perfect for a cold evening!

This is a great and easy recipe. I added some extra stuff, like corn and celery but I was amazed at how good it all turned out!! This is our new favorite winter soup.

Oh yeah!! This is the best and first potato soup I ever made and it only took about 20 minutes to do. I doubled the recipie for myself, hubby, and adult son and it was gone by the evening, and they were asking for more. The only thing I did was use chicken broth instead of water and I will always make it that way, (noticed other recipies on this site called for that instead of water) Am having some trouble finding my preferred brand of KNORR leek soup and dip mix, but when I do find it I stock up. Remember your bacon adds the salt so watch out adding additional. This is a wonderful wonderful recipie and 5 stars in my book. Congrats!!! And you others COOK THIS RECIPIE IT'S SOOOOO GOOOD!!

fresh leeks in the soup have a much better flavor then the mix. and yes.. it is good for us picky teenagers! (i know being one myself)
