Potato Latkes II

Shred buttery Yukon Gold potatoes and stir together with cooked mashed potatoes, grated onion, eggs, matzo meal and kosher salt. Fried by the spoonful in hot oil or butter, these golden, crispy pancakes make a special holiday meal.

Sweet Potato Latkes

For a sweet and spicy version of potato pancakes, combine shredded sweet potatoes with eggs, brown sugar, flour, ground cloves and cinnamon. Form into patties and fry in oil until perfectly crispy. Try serving with butter, maple syrup or whipped cream.

Making homestyle potato chips is fun and easy. Guaranteed they wont last long! A food processor with a slicing attachment is very helpful. Experiment with the thickness, you may like them thicker or thinner. I like to use olive oil because it has less trans fats, but you can use safflower, corn, or peanut oil as well as vegetable oil.

Potato and Broccoli Casserole

There 's lots of potatoes and broccoli taste in this hearty casserole. Broccoli soup, sour cream, cheddar cheese and a bit of mustard, join the vegetables in the pot and cook away in the oven for about an hour.
