This is a great recipe! It turned out like a potato soup with tons of great veggies in it. I modified it slightly as I got toward the end of the recipe because it wasn't all going to fit in the pot (come to think of it, this was due to the fact that I tripled the amount of celery and carrots called for). I only added about 2 cups each of milk and cheese, and left out the dumplings entirely. Great taste, no need for salt.
