Grated Potato Dumplings

This is an old family recipe that I have never found in any book. They're great served with meat gravy or cooked sliced onions in melted butter.

Potato Dumplings

This is a basic dumpling recipe that you can use in your favorite soup or stew. Mashed potatoes are combined with flour and egg and shaped into dumplings with a single crouton tucked in the center.

These delicious potato dumplings have become a family tradition. Served with beef or pork roast, they are delicious with or without gravy. They are a little time-consuming but well worth the wait.

I remember my mother often making this soup for Saturday night supper. During the war years, she would cook a lot of stews and soups - she'd start with a big kettle of chicken stock, and it was amazing what she could make! Even though I didn't like spinach much, I liked this soup. I loved to help Mom in the kitchen, and was cooking by myself when I was 10. Cooking has been one of my hobbies, along with sewing and crafting, ever since. I've even won several recipe contests. 

Potato Klubb (Norwegian Potato Dumplings)

Potato dumplings stuffed with a cube of ham are a specialty of the Trondelag region around Trondheim, Norway. Also enjoyed by many Norwegian-American families, the dumplings are boiled and traditionally served whole with melted butter, crispy bacon pieces, and stewed peas, or sliced and fried.

Sweet dark plums are wrapped in a potato dough, and boiled before rolling in sweetened toasted bread crumbs. My Austrian grandmother made these delicious dessert dumplings for us every fall. These take some time to make, but to me, they're well worth the effort.
