Potato Dumpling Casserole

Yummy potato dumplings baked in a rich cheese sauce. A family favorite, and a great use for leftover mashed potatoes. You can also double the sauce recipe and use it as the base for a terrific macaroni and cheese casserole.

These take time to prepare, but they're worth it! Yukon Gold potatoes are mashed with cottage cheese and butter, then wrapped in a circle of dough. The pierogi are boiled and then fried. Serve with sour cream, butter and fried onions, if desired.

This is an easy and filling supper dish, good with cooked greens or a tossed salad and some sprouted grain bread. Almost any vegetables can go into the mix; just make sure they're all cut up before you begin, and add the longest cooking ones first.

Kalamata olives, plump tomatoes, oregano, olive oil and garlic flavor the potatoes in this potato dish. All is turned into a saucepan with the potatoes and simmered until tender and the stew is flavorful. Six servings. 

Moroccan Potato Casserole

A lemon/vinaigrette sauce is made with lots of fresh spices blended in. Chunks of tomatoes, bell peppers and celery are tossed with the herb sauce and baked until the vegetables are tender, and have absorbed all the liquid.

Norwegian Klub is a dish my mother made when we were growing up. I like to have it topped with bacon grease and my wife likes them brushed with butter and sprinkled with sugar. Sliced and fried the next day these are a hearty breakfast meal
