"Shredded hash browns form the golden crust in this comforting quiche shared by reader Halina D'Arienzo from Murells Inlet, South Carolina. 'Sometimes I'll substitute diced cooked ham, flaked tuna or sliced mushrooms for the chicken in this favorite recipe of mine,' she says."

4 cups frozen shredded hash brown potatoes, thawed
3 tablespoons butter or margarine, melted
1 cup shredded Pepper Jack cheese
1 cup diced cooked chicken
4 eggs
1 cup half-and-half cream or milk
1/2 teaspoon salt

DIRECTIONS
Pat hash browns with paper towels to remove excess moisture. Press into a well-greased 9-in. pie plate; brush with butter. Bake at 425 degrees F for 20-25 minutes or until lightly browned. Reduce heat to 350 degrees F.
Sprinkle cheese and chicken into the crust. In a bowl, beat the eggs, cream and salt; pour over chicken. Bake for 20-25 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting.

First, I want to say that my husband LOVED this quiche !! The only reason I gave it four stars is because I, like so many others, changed a few things. I felt that the crust needed to be baked for almost an hour. I used egg substitute so I needed less milk. Lastly, I omitted the chicken (this time) and used ham and spinach. As I said, he loved it. Will make again and again, experimenting with different fillings. Thanks.

Tasty. I reduced the eggs & milk by 1/4 so it would fit in the pie pan I was using, but it still took more than 50 min to bake. Way more than the 20-25 in the recipe, so be prepared!

We liked this a lot. The first time I made it I only had Cheddar cheese on hand so I used that and threw in some chopped jalapeƱo from a jar. I made it again a few days later with the correct cheese and we thought we actually preferred the Cheddar version. I think with the Pepper Jack cheese we would have preferred ham or bacon. I also found I had to bake the quiche more like 40 mins. (the second portion of the recipe, not the crust) with both versions. Also, it seemed to taste better the second day both times.

In a hurry to prepare lunch, I decided to try this recipe after doing an ingredient search on that website. Well, we were not impressed. First it took about 40 minutes to finish baking the egg and milk mixture. Then the potato "crust" lost its crunch and ended up a little soggy. The taste was ok since there was no bad ingredients (just potatoes, chicken, eggs and cheese), but in reality it was more like a breakfast casserole and was a bit bland, even after the addition of some spices. I was going to give it 3 stars but my husband said it was more like a 2. As he pointed out, I would have been better off making grilled chicken with a side of my regular crispy hash browns!
