Ingredients

  • 1 pound lean ground beef
  • salt and pepper to taste
  • 1/4 cup diced onion
  • 4 medium potatoes, peeled and diced
  • 1 (14.75 ounce) can cream-style corn
  • 1 tablespoon butter or margarine

Directions

  1. Crumble beef into a shallow 2-qt. microwave-safe dish. Sprinkle with salt and pepper. Layer with onion, potatoes and corn. Dot with butter. Cover and microwave on high for 15 minutes; stir. Cover and heat 10-12 minutes longer or until meat is no longer pink and potatoes are tender.
