I used a mandoline and dumped the cut potatoes into ice water for a few minutes then blotted dry on paper towels. Only used a little more than a teaspoon of canola per potato and rubbed the slices as I took them out of the bag to make sure they were coated. I rotated 2 sheets of parchment and was done in no time.

I told my son that he was going to laugh at me. He knows then that I am going to present him with another homemade concoction. Then I presented him with a plateful of these chips. I got the thumbs up on this one. Wow! These really brown up and taste just like they should. Mine took approx. 3 1/2 min. in the microwave - and mine is quite powerful. I had better luck using a very sharp knife to slice these ultra thin rather than using the built in blade on my cheap cheese grater. Maybe now that everyone will be asking for this snack I will invest in a mandoline. Only 1 potato makes quite a few chips, and is enough to quench my craving. This is a good way to keep portion control to those of us who can't eat just one. Thanks Jessica. Nice one.

Found this recipe about an hour ago. Was very skeptical about chips made in the mircrowave, so decided to go make them right then and there. Oh my goodness these are soooooo good. Coated some with EVOO, then just sprayed the rest with cooking spray to save on calories. You cannot tell the difference! Sprinkled sea salt and pepper for one batch, caynenne for one batch, dill and salt for the other batch. I cut mine as thin as humanly possible and they took slightly over 3 minutes. What a delightful surprise!

I'm giving these a 5 star because I can see the potential. I think if I would have had a mandoline and used parchment paper they would have been a definitely three star. Instead, I cut them by hand and used a cheese slicer and I just didn't get them thin enough. And they took FOREVER to cook, even though some were paper thin I think they cooked for at least 10 minutes. My dh burned the heck out of his hand because the plate was so hot after the second batch. But they were really good, and if I ever buy a mandoline, I'll make them again for sure.

This is my first review - I look for recipes, but never commented until now. How easy are these chips?!! Like another reviewer, I put parchment paper right on the turntable in my microwave, sprayed them with olive oil spray, cooked for 5 to 7 minutes (have to watch them near the end) then spritzed once more with a tad more oil and sprinkled some with salt, some with cajun seasoning (if you like spice!) and one large potato made a huge mound! It fed my family of 3 to go with our hot dogs. I had to cook them in 4 batches, but you can make them ahead and let them sit on a cookie sheet until you need them. I sliced them on a mandolin to less than 1/8". Very potato-y tasting and healthy option for potato chip fans.

My 4 kids absolutely "potato chips" for dinner. These are a million times better than my oven variety because of the crispieness. All the kids and hubby love them as do I. The great part is you can make them as salty of flavorful as you want. Great for an evening TV snack too!!! Thank you for this. I actually got it out of my Allrecipes cookbook and had to come on line to rate it!

Awesome! The best way to go is to place the chips on parchment paper cut to fit the turn tabel in the microwave. I learned the hard way that they stick to the oiled plate. The kids love them and they are so easy. We like to sprinkle red wine vinegar and crushed sea salt on the cooked chips.

Like a few others, I stumbled upon this recipe by accident and gave it a try. I love it! What do I love about it? I love that I don't need to fry anything, I love that I can change the seasoning and control the amount of salt, I love that I can use different kinds of potatoes. I didn't love that mine took a bit longer than 5 min, but what can you do? :) I took the suggestion of using parchment straight on the turntable, and that worked really well. I'll be using this recipe again.

Absolutely marvelous! I still can’t believe that potato chips can be made in a microwave! I made them and they looked like Cape Cod Potato Chips and tasted even better! I used olive oil instead of vegetable oil as well as freshly ground salt & pepper. Who knew that it could be this easy? Thank you so much for sharing!

Oh my gosh, these are some really good and easy snacks! We tried this recipe as a family project. My husband cut the potatoes on the mandoline, and our kids arranged them on the parchment lined stoneware medium bar pan from Pampered Chef. We sprayed the parchment with Pam, and lightly sprinkled it with salt. After just a few minutes in the microwave, we were all very happy. YUM. Thaks for the recipe!

5 stars because it really is very easy and the results are really crunchy, not rubbery or funky at all. i don't have a mandoline, but i have a slicer that slices pretty well. they would be better a little thinner, but the result with a thicker cut turns out kind of on the cracker side. since we were just looking for a snack, we were perfectly content with that! thanks for such an easy recipe with so few ingredients! (oh, i also omitted the oil as one reader suggested and just spray the plate and potatoes with pam, so you cut out an extra step and fat/calories)

My husband thought I should give this recipe five stars, and he's very stingy with ratings! So these must be very good. He ate them as quickly as I cooked them, so I hardly ate any. I think the taste is similar to store-bought potato chips, but these are healthier, cheaper, and customizable. I made the first batch with vegetable oil in a bag as the recipe instructed, but then I tried spraying generously with butter-flavored Pam and they were just as good, so I'm definitely giving up on the oil. I used a mandoline to slice the potatoes (very easy) and put the slices on parchment paper cut to fit the bottom of my microwave. I patted the slices dry with paper towels before spraying with Pam to make sure they cooked properly. The chips were too dry for the salt to stick after they were cooked, so I salted them before cooking. My husband also liked them with garlic pepper. We want to experiment with more flavorings. The first batch took about nine minutes to cook, but as the microwave heated up, the batches took less and less time. The drawbacks of this recipe are that it takes a lot of time to make just a few chips and that the microwave cooking is a bit spotty if you don't use a turntable.

This recipe was better than I expected. I tried cooking them with a dinner plate sprayed with Pam and with plate with parchment paper sprayed with Pam. Both methods worked well. The paper just made it easier to transfer the chips. A single layer of potatoes took about 5 minutes in my microwave. Thank you for a great alternative to fried chips!
