INGREDIENTS
1 cup butter or margarine, softened
1/2 cup sugar
3/4 cup crushed ridged potato chips
1/2 cup ground pecans
1 teaspoon vanilla extract
2 cups all-purpose flour

DIRECTIONS
In a mixing bowl, cream butter and sugar. Stir in potato chips and pecans. Add vanilla; mix well. Stir in flour just until dough pulls away from the sides of the bowl and forms a ball. Shape into 1-in. balls; place 2 in. apart on greased baking sheets. Flatten with a glass dipped in flour. Bake at 350 degrees F for 12-15 minutes or until lightly browned.

Tried these on a whim because I had some potato chip crumbs left at the bottom of the bag. Wonderful discovery; I really enjoyed these! They're like pecan sandies, only better. They're now my new favorite cookie!

This is one of my favorite cookie recipes. I used plain lays without ridges. The cookies that brown around the edges taste the best and I always like a soft, underbaked cookie.

Yummy! I used regular chips and dipped them in powdered sugar after they were finished baking. The powdered sugar was a nice addition since this is not a an overly sweet cookie to begin with.

What a shocker.....these were really really good! They are excellent with a good dusting of powdered sugar and taste very much like pecan sandies. Thanks for sharing your recipe!
