Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cream the shortening with the sugar. Add the egg and beat well. Stir in the vanilla.
  3. Add the flour and baking soda and mix well. Stir in the crushed potato chips and chopped nuts. Shape cookies into balls and roll in white sugar.
  4. Place cookies on an ungreased cookie sheet and flatten slightly. Bake at 350 degrees F (175 degrees C) for 10 minutes.

My mom used to make potato chip cookies and we all loved them. Unfortunately, her recipe went to the grave with her 16 years ago. I thought I hit the jackpot when I found this recipe. It wasn't like hers at all. However, it was easy, quick and not bad. Just not what I was hoping for...

Super recipe! A great way to use up old chips. Easy enough for the kids to make. Really tasty!

My family loved these. I just used butter instead of shortening. My only complaint is that they really stuck to the pan, but that could have been operator error. Delicious!!
