This turned out great. I changed a few things: used butter instead of margarine, 6 cups of better then bouillon instead of water and cubes, 5 cups of broccoli, steamed, and added 1/4 cup of fresh basil. I pureed everything. I chose a very strong cheddar cheese after reading the other posts. I also followed other posters' recommendations and added 2 T minced garlic with the onion and a can of cream of chicken soup with the cheese. I served this soup with French bread and sour cream. Definitely a keeper but not as easy as original recipe. Thanks -

We loved this soup! The only change I made was adding a can of cream of chicken soup at the end to make it thicker. It was very filling. We used croutons instead of crackers or bread and it was a nice addition in the soup. I will make it again!

Tasty on a cool evening. I only pureed the potatoes and left the broccoli chopped. Very thick, stick to your ribs soup and great with hot fresh baked french bread. I will add garlic next time. Thanks Ruth!

This was awesome, I really enjoyed it and the only thing I did different was used velveeta instead of cheddar and I used 1/2 cup less. I also added alot of pepper and a small amount of crushed red pepper. This was really good. Thanks!

I LOVE this recipe. Total comfort food, but if you cut back on the cheese, it's not as unhealthy as cream-based soups. I vary it a little each time, sometimes adding corn or carrots or both, and I use way less cheese than called for. Overall one of my favorites. The only complaint I have is that the broccoli stinks something fierce when you cook it, but oh well.

good recipe. i do not think it is necessary to use the same amount of cheese as broccoli... this can be a very healthy soup. I used olive oil instead of butter, added way less cheese, and I didn't see the importance of cooking the broc seperately.. it can be added a little after the potatoes and boils fine... This was great. Thanks!

I don't really know what to think about this soup. First of all, it was not really a soup. More like a thick mush. That is not to say that it didn't taste good, but it certainly didn't look appealing. Secondly, it just didn't have a lot of flavor. I love broccoli, potatos, and cheese, but this soup just seemed to be lacking any zip that would make it truly delicious. That said, I did use Colby Jack instead of cheddar, since that was what I had in the house. I'm sure that if I used a sharper cheese, such as the cheddar, it would have been a bit more tasty. Definitely a good recipe to give a try, but don't expect soup magic! :) Thanks.

Oh yum!!! Total comfort food. I only used 2 pounds potatoes and one bag of frozen broccoli. I sauteed one clove of garlic, minced, with the onion and didn't bother cooking the broccoli separately - it cooked fast enough once I threw it in with the potatoes and let it simmer for a bit. As per the suggestions of other reviewers, I used a one pound block of velveeta - I have never purchased velveeta before and was shocked that it was not in the cheese section...a little disturbing, but good!!! Not that I am going to turn my back on real cheese, but the velveeta was not bad. Oh, and I pureed all of the soup, not just half - pretty much so that the broccoli hating fiance would not turn his nose up at it before trying it. Success!!

This really hit the spot! It has been cold and rainy here for the past two days. So I was in a "soup mood" and I saw this recipe and decided to give it a try. I am glad that I did! This is really good. I did add a can of evaporated milk to give it a little more creamy taste. I did not have a food processor so I just mashed mine like one reviewer did with a potato masher. Works great!

This was excellent! I sauteed the onion, added a clove of garlic, fresh ground pepper and a handful of baby carrots, then just cooked them all with the potatoes and broccoli in the broth. I pureed the entire thing (use a blender--a food processor splatters!) and tasted it. It was so delicious that I decided the cheese was optional. It also did not require any additional salt. I'm serving it tonight with homemade garlic croutons and just a sprinkle of sharp cheddar. Thank you for this wonderful, adaptable recipe. It's now in my recipe box and on my list of ideas for food to bring to sick friends. I'll bet you could easily turn this into a delicious vegan meal by using vegetable broth and omitting the cheese.

Wonderful soup! I added some sage, marjoram, and tumeric (for more of an orange flavor), and also about one cup of the cheese I made a skim mozzerella. The soup was smooth (I pureed it entirely). It was very easy, and certainly worth making again.

This was delish! I made a few changes, near the end I added a can of evaporated milk. I added my fresh brocolli into the soup pot near the end, and it cooked that way. And I only had two potatoes, so I used some hashbrown cubes as well, and it turned out great! Will be making this again.

It was just me, so I halved it. I used some frozen chopped onion ("seasoning blend") and half a bag of frozen broccoli, which I cooked separately. I added the broccoli and the cooking liquid, too. This soup is so quick and easy and comforting and delicious. Thanks!

Awesome! Of note, you can add raw broccoli to the soup a few minutes prior to pureeing in a blender. This way, you don't have to cook the broccoli separately. I also added white pepper, red pepper flakes, savory, and garlic powder. Next time, I'll definitely saute garlic with the onion, as I think that would make this awesome soup even better!
