I used panko instead and it looked pretty. Because my mashed potato was too moist, it didn't stay the shape. Next time I make it, mashed potato should be very dry.

These are wonderful as a side dish, or snack..the healthier equivalent to a tater tot. The meat is also another nice touch, and holds the croquettes together well. These were even better the next day, with various dips. Thanks for sharing, Violet!

Very good. Tastes good dipped in bar-b-que sauce, blue cheese dressing, or ketchup. Also very good the next day cold.
