This is probably the best pot roast I've had since my slow cooker disappeared on me! (don't ask, I lose everything!) I made it last night fot a late night supper and the hubby and I both loved it! I hate anything mushroom related, so I use one can cream of chicken and one can cream of broccolli. Odd coloring at first, but the taste was awesome. I also used the herb and garlic soup mix since I hate onions, too. I rubbed some cajun seasoning, garlic powder and black pepper onto the roast first and shoved some minced garlic (garlic fiends here) into the roast which REALLY enhanced the flavors. Also added about 5 cubed potatoes, which were just scrumptious! Wrapped it up tight (well, I thought it tight, did leak some) and baked my 3 pounder for about 3 hr and 15 mins. By then, the smell was too good to resist so I took it out (burned myself on HOT foil! duh!) and let it sit about 5 mins. Then couldn't hold hubby back any longer! lol We sliced it up and just devoured it! The roast was tender, the gravy to die for and the potatoes perfect!
