Delicious. I used all the ingredients listed but in different forms as noted so I wouldn't have to go to the store: 1 whole bag of Kroger brand frozen seasoning veggies that includes carrots, onions & celery, 1 can Rotel tomatoes that already has green chilis, plus a container of fresh pico de gallo I had in the fridge. I also used beef stock instead of water and bouillon and increased it to 4 cups. Served it with rice. Will definitely make again.

This was actually better than I expected - I pretty much followed the recipe except since I was cooking for 2, I cut it down a bit and used some boneless pork chops and instead of pork roast (cheaper too). I ended up *not* adding the hot sauce, because it felt too liquid-y to me already and after it was done I really didn't miss it. Also didn't use the beef bouillon but substituted beef broth for the 2 cups water. Will definitely stick it in the cookbook to use again.

I usually stay away from recipes with few reviews. I'm glad I was feeling adventurous today! This was definately one of the best. The flavor was outstanding. I made a few changes, which I don't think really changed the recipe, just tweaked it a little for my personal taste. I left out the onion, used no oil when frying, used 4 tsp of beef bullion and no salt. I would recommend more water. I used 6 cups and it still wasn't quite soupy enough for me. If I had only used 2 cups it would have burned up in my crock pot! I highly recommend this recipe and I can't wait to make it again and again!

This was an excellent soup and we will make it again. I prepped it the night before (except for browning the pork) and it went in nice and easy in the morning. I put in extra garlic and I used a medium salsa, so it was quite spicy for the kids, I think I will try it again with a peach salsa and a bit less cumin. My husband likes a thicker stew-like meal, and this is definitely soup, so I will also probably thicken it with a touch of flour next time. Those are all personal preferences though - great recipe, easy to follow.

VERY good soup! Yesterday's weather was cold & rainy, so I made this in the crock pot for dinner. What a delicious soup. I served it with rice. Good comfort food.
