I made this recipe exactly as written. I found that simmering the pork cubes for two hours was too long; next time I will stop at 1 1/2 hrs so the meat doesn't fall apart. Maybe that's one reason the dish seemed more like a stew than I expected. My husband and I weren't sure how we liked the dish at first taste; it was mild and different than our normal flavor combos (which tend to have lots of garlic or lots of spices). After a few bites, however, we decided we did enjoy the subtle blend of the recipe. We'll probably try this one again!
