Italian Pork Pie

Ground pork, sausage, rosemary, bread crumbs, parsley and onion are combined, arranged in a pastry shell and sprinkled with grated cheese. The top crust is fitted on, the edges crimped, and this savory pie is baked for an hour. This pie will go well with a green salad.

This is the recipe my grandmother used to make. It only uses pork for the pie and is delicious. I make one for my father every Christmas Eve and he loves it!

Tamale Pie II

White cornmeal is cooked up and spread into the bottom and sides of a 2-quart casserole. Then ground beef is cooked with chopped onion, green pepper, corn, chili powder and tomato sauce. The beef filling is spooned into the casserole, topped with a thin layer of cornmeal and a generous sprinkling of Cheddar cheese.

When I married a Rhode Island guy, this was a must at holiday time, but we Southerners like it so much, we have it anytime! Meat and potatoes cooked in pie shells. This one's easy and fills them up.

Black olives, cornmeal, garlic, creamed corn, stewed tomatoes, ground beef, onion, eggs and milk are combined, cooked, and poured into a 2-quart casserole to bake. Cheddar cheese is sprinkled over the top during the last five minutes. Serve this savory pie with sour cream and salsa.

Pork Pie is a standard Christmas Eve or New Year's Eve treat in my predominantly French-Canadian hometown in Maine. It's served with catsup or mustard, tossed salad, and pickles. Simple but wonderful. Top individual servings with catsup or mustard before serving.
