These are really delicious. I made a few modifications to the gravy, but basically followed the recipe. One thing, make sure you drain the potatoes after they are shredded. If not, they can be too watery and make the meatballs too wet.

This gets 5 stars for ease. Make sure your potatos are shredded very finely. I followed the recipe with the following exception. I browned them in a little olive oil and I didn't remove them from the pan. I dissolved the granules in the warm water in a glass measuring cup and just poured it in the pan with the meatballs to simmer. Then, after fully cooked, I took the meatballs out, covered them, turned up the heat, reduced the stock a bit and added the flour for thickening. Pour the sauce/gravy through a siv to get rid of the little potato pieces that fall out. Great flavor. Served with buttery garlic mashed potatos. Husband, 3yr old and 1 yr old loved it.
