I thought this was REALLY good! I felt it could have used 1.5 cups of broth as I thought it could've been moister, but my spouse didn't. I only had to cook it an extra 10 minutes for fuuly cooked noodles. At 1 hour they were just about there.

Made the recipe exactly as is, but the next time I think I'll cook the noodles separately as the casserole tasted quite starchy.

This is very Tasty!! I used cooked chicken (only because I grabbed the wrong package out of my freezer--LOL!) and it still came out great! However, I did have to cook mine for almost 2 hours for the noodles (elbows) to be tender.

Great comfort food. The pork I used was from the Kalua Pig recipe. I used low sodium chicken base to make the broth so I did use the 1/2 tsp salt, I don't think it would be needed with regular broth. I didn't have mushrooms or pimentos and I used a combo of shredded no fat and regular cheddar for the cheese. I used Country Pasta noodles which are narrow but thick. They were soft after an hour but I gave it another 20 minutes to soak up more of the juice. That would be my suggestion for people who find it too loose...give it another stir and let it go longer.

This was just okay. It was edible, but even after I added some jalapeno juice and crushed red pepper, it was pretty bland. I preboiled my noodles to cut down on cooking time.

I really liked this and the kids tolerated it. I'm sure if I make it more, they'll eat it. I omitted peppers and mushrooms.

Mine turned out mushy, but maybe I used the wrong type of noodles. I used medium egg noodles and stirred every 20 minutes as directed. The sauce was good comfort-style flavor though, so I may try this again with cooking the noodles al dente beforehand and adding them after the cheese has melted in the casserole.

The flavors in this dish were awesome! I think I used too much broth/too little noodles as it turned out to be a mushy. I think next time I will serve it over the noodles instead, and add crumb topping or some sort.
