Pork Noodle Casserole

Barbara Beyer of Two Rivers, Wisconsin shares this hearty pork, corn and noodle dish she learned to make from her grandmother. 'We never have a family get-together without it,' she notes. 'It's a great addition to a buffet and makes a filling meal with the addition of warm rolls.'

Cereal: it's not just for breakfast anymore. Here it is used to make a crispy, savory topping for pork baked with mushroom soup, green beans, pasta and Cheddar cheese. Creamy and crunchy.

Hot Dog Noodle Casserole

Spinach, egg noodles and a creamy hot dog mixture is topped with peas and crumbled bacon. What a casserole! This is a recipe I received in German class 24 years ago. It looks unusual, but it is very delicious. I don't know where the teacher found the recipe. Drop biscuits go well with this casserole.

Use packaged convenience foods to create this easy one-dish meal. Try onion soup, instant rice and canned sliced mushrooms to make a tasty, fluffy bed for juicy pork chops. Toss in some veggies and bake.

I made this up one night when I had leftover pork roast that I had cooked in my slow cooker and frozen. Pork, broccoli and rice with a hint of curry. It's very homey and easy to make ahead of time.

This was a favorite in my home growing up and now it's a favorite of my family as well. I double the recipe these days for my husband and three children. For a change of pace I add canned chopped green chilies and 1/8 teaspoon cayenne, use pasta shells or spirals, or top the casserole with sliced American or cheddar cheese instead of bread crumbs.
