Boneless pork loin stuffed with a mixed olive and pepper relish. Be sure not to salt the relish as the olives provide plenty on their own. Cooking times may vary depending upon the true size of your pork loin, so it is important to check the internal temperature.

Rubs are mixtures of spices that act like a dry marinade. The can be applied 10 to 20 minutes before cooking or longer to intensify the flavor. This rub also works well on chops or tenderloin. Serve with roasted potatoes and steamed vegetable medley.

As an alternative to turkey or ham for the holidays one year, I decided to try this recipe. My family liked it so much, it's become a standard at our house.
