Pork Chops with Stuffing

"This was my mother's original recipe, but through the years I've changed is slightly. Now my four daughters enjoy making this family favorite. Before we retired, we raised hogs on a farm in Pennsylvania. I cooked a pork dish at least once a week then, and I still do today."

6 (1/2-inch thick) pork chops
1 tablespoon cooking oil
3 cups cubed day-old bread
1 (10.75 ounce) can condensed cream of mushroom soup, undiluted
1 cup chopped celery
1 cup chopped onion
2 garlic cloves, minced
1 egg, beaten
1/4 teaspoon poultry seasoning
1/4 teaspoon pepper
1/2 cup shredded Cheddar cheese

DIRECTIONS
In a large skillet, brown pork chops in oil. Place in an ungreased 13-in. x 9-in. x 2-in. baking pan. Combine bread cubes, soup, celery, onion, garlic, egg, poultry seasoning and pepper; spread over pork chops. Bake uncovered at 350 degrees F for 45-55 minutes. If desired, sprinkle with cheese and return to the oven for 5 minutes or until melted.

This is a quick and easy recipe. I subsituted stove top stuffing for bread crumbs but used everything else in the recipe as is. My grandchildren loved it. They are picky eaters but the added cheese made it a hit.

This was a good base recipe but I made several revisions. I used 6 center cut boneless chops, 5 cups of herbed cubed stuffing instead of bread, added 1/4 white wine, and a 2 teaspoons of Bell's Seasoning, 2 cans of cream of mushroom instead of 1, 1/2 cup shredded carrots, and omitted the eggs. I covered with foil and cooked at 300 degrees for 2 hours which made the meat very tender, you could eat it with a fork. I only put cheese on half as I wasn't sure cheese belonged on this dish. I preferred it without, I will make this again as my family loved it with garlic smashed potatoes, green beans and apple sauce.

My husband fell in love with me all over again! This was a great dish and he really enjoyed this a lot. Very filling, very homey and a great comfort food. I made this for our anniversary since my husband asked for "smothered pork chops with bread crumbs and mushroom soup like grandma used to make". Well, this dish was just what he wanted! I used a extra can of cream of celery soup too, used 1 full tsp. poultry seasoning, left out the egg, and since I used a whole bag of bread stuffing mix I added in 1/4 c of chicken broth. Covered with foil during baking, left off the cheese. I chose this one last minute so I just used dried celery flakes and dried minced onion. Thanks, my husband and son were really happy! I even ate a half too :~)

I only cooked my pork chops for 25 minutes and they were very dried out. Perhaps next time I may add a little water to the pan or maybe some milk to the soup to make it a little creamier. If I try it again
