  1. Place pork chops in a casserole dish. Peel, seed and section the clementines.
  2. Place half the clementine sections in a small bowl (chop the other half, reserve and refrigerate for later use in salsa). Use a fork to press half the sections into small pieces. Add orange juice and soy sauce then mix together well.
  3. Pour mixture over pork chops, being sure that the chops are completely covered with marinade. Cover the dish and refrigerate 4-6 hours or overnight.
  4. Pre-heat oven to 350 degrees F. In a small dish, blend onion powder, salt substitute seasoning and chili powder. Remove chops from marinade and season both sides with spice mix.
  5. Bake in oven for 22-28 minutes, depending on the thickness of the pork chops.
  6. Combine the cucumber, grape tomatoes, bell pepper and lime juice with the remaining clementines to make a fruit and vegetable salsa.
  7. Prepare brown rice and spinach according to directions on package.
  8. Serve each pork chop with equal amounts of clementine salsa, 1/2 cup of brown rice and 1/2 cup of spinach.

My family loved this recipe as it was a different twist on our usual pork chop dinner. I used center cut, boneless chops and did marinate them overnight. Great flavor and the salsa goes perfectly with it!

didn't really like the salsa and 1 tsp chili powder was too much

One of the best recipes I've ever found on this site, absolutely superb! My husband won't touch fruit, so I didn't make the salsa, but the marinade and rub looked good, so I used them and baked the chops. The chops were so flavorful and tender, my husband asks for them all the time!

I don't eat pork, so I used this salsa on chicken breast...perfect!!

LOved it absolutely. Made it with tofu instead of pork chops. Just sauteed the spinach with garlic & added an avocado to the salsa.

This recipe is the BOMB!! I'm not a huge pork chop fan but I gobbled this up! The salsa would taste amazing on fish as well!

Salty and sweet - delicious! Left out the chili powder and think it was probably a good call.

Made it exactly as written. Very good, but next time will try with canned oranges for faster prep. I would also like to try it with a mango salsa.
