I've made this recipe twice now- both times I have used boneless, thick cut chops, cut my own pocket with a VERY small opening (requires only 1-2 toothpicks), pan seared and then baked them. The first time I used Gorgonzola cheese and extra bacon- these turned out very good but I discovered I am not a fan of "blue" cheeses... The second time I used the smoked Gouda, extra bacon and a little diced up apple- THIS WAS DELISH! The apple with the gouda and pork is the perfect mix. I don't remember how long I baked them for- but both times these stuffed chops have turned out super moist and yummy. This is a definite keeper at the top of our rotation! Thanks!

Very good recipe! The gouda blends very well with the pork! Next time I'll make this recipe, I'll include sliced mushrooms and a bit of chopped up jalapeno peppers since I enjoy my food spicy.

Very delicious. My only suggestion is to cut down on the cheese, I personally love cheese and thought it would melt out a little when it cooked but it didn't and when we ate everything it was just a little over cheesy but still delicious.

Great recipe. I made this for a party of 9 during our beach vacation and it was wonderful. I did not have access to a grill, so I browned the pork chops in a pan on the stove and then finished in the oven. Do not overcook , or the pork with be tough.

Mmmmm...the pork chops were great! Smoked gouda was perfect with the bacon. I brushed bacon grease on each side of the chops while they were on the grill for that extra bacon flavor. :)

My husband, kids and I loved these chops! My neighbor gave me an enormous bag of apples, so I added about 1/2 of a small one to the stuffing (diced). Great recipe :)

This one is a keeper. I used more bacon than it called for, we like bacon:) Grilled on charcoal and it gave it wonderful flavor. Even my 3 year old loved it. I did soak the toothpicks for a couple of hours to help prevent them from burning. It seemed to have worked. Will for sure make again.

Great recipe! Cooked close to 8 minutes on each side with medium grill heat. Used a thick cut pork chop. Everything was great. The kids really liked it too.
