I got tired of grilling using the same marinades time and again. I found this recipe and decided to make it as a surprise supper for my wife. It was a huge hit! Both of us love it and it is very easy to make. If dressed up properly it can impress guests and make for a fancy meal.

This was very good. I had to judge the amount of filling to make. I used probably 8 or 9 slices of bacon and at least 1/4 pound of cheese. My pork chops were about 1.5 inches thick and there was barely enough filling for the 2 pounds I had. I'll make this again and make more. I forgot to put the pepper in the filling but just salted and peppered the chops. I seared the chops in some bacon grease and then put the skillet in the oven at 350 until there was no more pink. I had to keep checking them but don't remember how long it took. The family loved it but wanted MORE FILLING! Thanks for the recipe!

These were good and easy to make, just a little time consuming. I seemed to dirty every pan in my kitchen. Cooking the bacon, baking the chops - not to mention the dishes to cook the rest of my dinner. If you inexperienced like me, budget yourself some time to make these. Excellent pork chops, though!

Absolutely wonderful!! The taste is great and they are visually appealing too. I did not grill mine. I seared them in a fry pan then finished them off in the oven. I simply seasoned the outside with a little garlic pepper, no salt. I used boneless loin chops because that is what I had in the freezer. These were a huge hit with everyone. Definately company worthy.

These pork chops were very tasty. I used pancetta instead of bacon since I had it on hand and added some chopped chives and grated garlic to the mix. The chops seemed to be extra juicy and flavorful.

Wonderful! I used 2 thinner chops and put filling in between. Also used sliced smoked gouta instead of shredded. Seasoned with Montreal spicy seasoning, then coated with olive oil before grilling........absolutley wonderful!! Quick and easy too.

this was delicious, and very easy to put together. i sauted some red peppers, onions, garlic and mushrooms in a small amount of the bacon drippings, along with some chicken broth to serve on top. everyone loved it. simple, but classy enough to serve for company.

Made this last night, it was very tasty. My chops were too thick to finish on the Foreman so I popped them in the oven until all the pink was gone. My picky fiance loved them!

In my husbands words "this is damn good!" This was wonderful, the thick cut chops were moist and tender, the bacon and gouda was an excellent combo. I used boneless chops a little over 2 inches thick as that's all my butcher had available, a used italian flat leaf parsley (which we felt was a little overpowering and will cut way down next time), and I sprinkled them with a garlic salt seasoning and fresh cracked pepper. Very yummy and we'll be making these again! Thank so much for sharing the recipe.

Very impressive. I like that the stuffing didn't have bread crumbs or other fillers. Great for low carbers. I want to try this using chicken breast.

Hubby LOVED this. I thought it was alright. Had more fun eating the chuncks of smoked gouda all week lol. I didn't even need twine or tooth picks. I guess the ones I got were thick enough and held their own. Will definitely make this at least once a month or so. Thanks for the idea :-)

This was the first stuffed pork chop recipe we have tried. What a standard to set! It was exceptional! We followed the recipe to the "T". The butcher where we got the chops cut a nice pocket in them and we didn't even need toothpicks. I still can't believe how good these were! Can't wait to make them for company! Thank you!!!

This was outstanding...I ended up frying the pork because it was raining outside and we could not set up the grill but they turned out just as good. I am betting you could probably bake these also to be less fattening.

This recipe was AWESOME!!!! It is super good in a thick chicken breast also. What I did so the cheese wouldn't melt out was cooked the meat first then cut the meat so it had a pocket like a pita bread and stuffed everything in there. Yum yum yum. Would recommend to anyone who loves their gouda!
