6 boneless pork chops, trimmed
2 tablespoons water
1 (14.5 ounce) can diced tomatoes, undrained
1 (10.75 ounce) can condensed golden mushroom soup, undiluted
1/3 cup chopped onion
2 teaspoons Dijon mustard
1 pound fresh mushrooms, sliced
1/4 teaspoon salt
3 cups hot cooked rice
2 tablespoons minced fresh parsley

DIRECTIONS
Coat skillet with nonstick cooking spray; brown pork chops on both sides. Remove and set aside. Add water, scraping bottom of the skillet to loosen any browned bits. Drain tomatoes, reserving juice; set tomatoes aside. Add juice, soup, onion, mustard, mushrooms and salt if desired to skillet; mix well. Return chops to skillet. Cover and simmer for 30 minutes or until pork is tender. Stir in tomatoes; heat through. Combine rice and parsley. Serve the pork chops and sauce over rice.

Iused cream of celery because I did not have the mushroom. I also used canned mushrooms again because it is what I had on hand. I also seasoned my pork chops with salt while browning instead of adding salt later. I turned out wonderful. Even my 7 year old son loved it and he is very picky. I will definitalty make this again.

Very good and easy to make. I used canned mushrooms and did not have parsley. It made a nice gravy for rice or noodles.

Delicious and easy. I didn't change the recipe at all and it was great but next time I think I might add a dash of sherry or white wine to give it some more flavor. I will definitely be making this again.

A very good basic recipe. I feel it needs some herbs to deepen the flavor. Other than that, it works well and is fast and very easy.

I did change around the recipe based on other's reviews.....I omitted the mushrooms, added white wine instead of the water to scrape up the brown bits, it gave it more flavor... Added more onion, seasoned the chops with the salt before browning... I didn't have dijon mustard, but spicy brown mustard which was just as good... Added a touch more white wine to the cooking...everyone thought it was good, but son-in-law thought it was so-so, he's very picky.... But it was excellent in all the rest of our opinions.. Thanks for a great recipe!!!!

I liked this recipe for a quick meal, I would add some pepper to the meal and I completely excluded the salt. I also used brown rice instead of white rice for a healthoer option.

Quick and easy, we didn't have mushrooms so I cut up some green peppers and I substituted brown horseradish mustard because I didn't have enough dijon. I'm sure it gave it a little different taste but it we thought it tasted great!

I tried this recipe last night and it was a hit! The pork chops wer SOOOOO tender! I thought the tomatoes tasted too raw, so next time I'll add them in the last 10 minutes. This dish was quick and easy to prepare. I'll definitely keep it in my reicpe box!
