Pork Chop Dinner for Two

"I'VE PREPARED this dish for a tableful of people, but it's easy to fix for just two. All the ingredients can be adjusted to satisfy the appetites to be served. If you like different vegetables, simple cook them right along with the other ingredients. My side dishes for this meal are bread and a toasted salad. --Shirley Lazor Colorado Springs, Colorado"

2 (3/4 inch thick) pork loin chops
1 tablespoon cooking oil
2 medium potatoes, peeled and sliced
1 medium onion, sliced
1 medium carrot, sliced
1 tablespoon butter or margarine
1/2 teaspoon salt
1/4 teaspoon pepper

DIRECTIONS
In a skillet, brown pork chops in oil. Place in a greased 8-in. square baking pan. Layer potatoes, onion and carrot over chops. Dot with butter. Sprinkle with salt and pepper. Cover and bake at 350 degrees F for 55-60 minutes or until pork chops are done.

The meat was really tender and juicy. The vegetables on the top dried out a bit since they didn't have any juice so I may cover it next time. Overall VERY good. Will definitely make again!

This dinner was absolutely deliciious! Because we had a 75 min. meeting before supper I set the oven temp at 330o. The dinner was perfect.

Delicious! I made exactly as stated but omitted carrots since I didn't have any on hand. My husbad is very picky about how his pork chops are done and he loved this recipe. It will go on our list of favorites. Thanks!

Simple and Yummy. I made this for Sunday supper for my boyfriend and I today and it was great. I did add 2 extra potatoes and only half an onion tho. thanks for the recipe

I added a few extra potateos, left out the carrots and added some lawrys and quite a bit more seasoning. It tastes good and was one of the healthiest things we've eaten in awhile.

This is an awesome recipe! I just used less onion because I'm not really a fan of onion and added a little bit of garlic powder just for taste, not sure if it made a difference. My husband who usually doesn't like pork cleaned his plate fast and asked for seconds! This will definately be one of our regular meals.

This was a tasty new dinner to try. I didn't have any carrots, and I added some garlic and rosemary to the chops. The flavor was good and my fiance cleaned his plate!
