1 pound fully cooked smoked sausage, cut into 1/2-inch slices
1 medium onion, chopped
1 medium green bell pepper, cut into 1 inch pieces
1 (14.5 ounce) can diced tomatoes, undrained
1/2 cup beef broth
1 tablespoon brown sugar
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1 (20 ounce) can unsweetened pineapple chunks
2 tablespoons cornstarch
Hot cooked rice

DIRECTIONS
In a large skillet, cook the sausage, onion and green pepper until the meat is no longer pink; drain. Add the tomatoes, broth, brown sugar, garlic powder and pepper. Drain pineapple, reserving juice. Stir pineapple into sausage mixture. Bring to a boil; cook, uncovered, for 5 minutes.
Combine cornstarch and reserved pineapple juice until smooth; gradually add to sausage mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Serve over rice.

Nutritional Analysis: One 1-cup serving (prepared with reduced-fat turkey sausage; calculated without rice) equals 201 calories, 7 g fat (2 g saturated fat), 48 mg cholesterol, 851 mg sodium, 22 g carbohydrate, 3 g fiber, 13 g protein. Diabetic Exchanges: 2 lean meat, 1 vegetable, 1 fruit.

This was excellent served over brown rice. I didn't make any changes. Thanks for the recipe. This recipe would be good with chicken too.

Pretty good, easy recipe. This would go good with a nice spicy chicken sausage or even diced chicken or pork. Not flavourful enough on its own, so I threw in a few minced garlic cloves instead of powder... a splash of soy sauce & white wine, and half a tsp of crushed chilies. I used fresh tomatoes and a squirt of ketchup instead of canned. I like spicy, so used chopped new mexico green chilies instead of bell peppers. Used seasoned (garlic) chicken stock as that's what I had on hand. Added a couple of tablespoons of fresh chopped parsley at the end - was quite good.

It was good and filling...not exceptional. The sauce was nice and thick but needed a little more flavor. I'd recommend adding some spices for flavor. I omitted the tomatoes, substituting a little tomato paste. I also replaced the smoked sausage with mild Italian sausage.

My family didn't like this recipe. It wasn't nearly sweet or spicy enough. We just like recipes with more punch. I did like the flavor of the sausage, onions and peppers together, of course.

This was good and quick to prepare. I agree with another reviewer that said this would be good with spicy chicken sausage, but then again, I love spicy food. I followed the recipe to the letter, didn't change a thing. Thanks.

This was a tasty dish, but not amazing. It was very easy to make and pleasing to eat, but I don't think I would add it to my recipe box repetoire...

Forgot to add the tomatoes and was still AWESOME!! Great dish, there were no leftovers!! Although, I used red peppers instead of green! Second time I made it I remembered the tomatoes....Just as delicious!
