4 cups water
1 cup cornmeal
1 teaspoon salt
1 pound Italian sausage
2 garlic cloves, minced
2 tablespoons minced fresh parsley
1 (14.5 ounce) can Italian stewed tomatoes
1 (6 ounce) can tomato paste
1/4 cup shredded Parmesan cheese

DIRECTIONS
Combine water, cornmeal and salt in a double boiler or heavy saucepan; bring to a boil, stirring constantly. Reduce heat; cover and simmer for 1-1/2 hours, stirring occasionally.
Meanwhile, brown the sausage and garlic in a large skillet; drain. Cool slightly. Cut sausage into 1-in. pieces; return to the skillet. Add parsley, tomatoes and tomato paste; bring to a boil. Remove from the heat.
Spread half of the cornmeal mixture in a serving dish; top with half of the sausage mixture. Repeat layers. Sprinkle with Parmesan cheese. Serve immediately.

Delicious and what a show stopper! Used readymade polenta from Trader Joe's. Added a bit of diced onions, sugar, balsamic vinegar and red white to give added depth to the sauce.

I have made this three times and followed it to the letter the first two times. The last time I made it, I added a little more garlic and followed a previous reviewer's suggestion of adding a bit of good balsamic vinegar (which I love). Either way, I love it, and so does my family!

The sauce/sausage combo was excellent but, I found the polenta a bit bland. However, this was the first time making polenta so I may have not made this correctly. After cooking the polenta, I layered everything lasanga-style and topped w/fresh mozzerella and baked in the oven for 30 minutes and 375. This masked the blandness of the polenta and tasted pretty good but I don't think that I would make this again.

Awesome recipe. I did not change a thing and it was great. I've made it twice and it was a hit both times. All the adults loved it. It was not appealling to my finicky teens.

I'm sure this recipe would be yum-o any way you make it! I used the cheesy polenta recipe (allrecipes) with alouette sun dried tomato cheese. Then made the sausage sauce with sausage and bottled sauce leftover in the fridge. It turned out awesome. My profession is a cook, don't be afraid to substitute when you do not have the exact ingredients! If it's a good ingredient the final product will be YUM-OH!

I used leftover sausage and it turned out wonderful. My husband and I never had polenta before and we really enjoyed it. My only question was how come there wasn't nutrition info.
