Pointsettia Cookies

INGREDIENTS

  • 3/4 cup butter, softened
  • 2/3 cup white sugar
  • 1 (3 ounce) package cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 egg
  • 2 cups all-purpose flour
  • 1 teaspoon red food coloring
  • 1 cup red decorator sugar
  • 1 cup confectioners' sugar
  • 2 teaspoons water
  • 1 drop yellow food coloring

DIRECTIONS

  1. Preheat the oven to 350 degrees F (175 degrees C). Line baking sheets with aluminum foil or parchment paper.
  2. In a large bowl, cream together the butter, sugar and cream cheese until light and fluffy using an electric mixer. Add egg and vanilla; mix until well blended. Stir in flour by hand using a sturdy spoon while adding enough red food coloring to make the dough turn a reddish hue. Roll dough into 1 inch balls and place them on the prepared cookie sheets, spacing 1 inch apart. Refrigerate the cookies on their cookie sheets until firm, about 10 minutes.
  3. When the cookies are firm, make three slices across each cookie to make 6 slices like a pie, cutting only about 2/3 of the way through the cookie balls.
  4. Bake in the preheated oven for 10 to 12 minutes, until cookies appear dry. Cool on the cookie sheets, then peel away from the aluminum foil. Make the icing for the cookies by mixing the confectioners' sugar and water until they reach a piping consistency. Put icing into a pastry bag or resealable bag and cut a small piece off of the corner. Pipe small dots onto the center of the cookies. Allow icing to dry before storing cookies in an airtight container at room temperature. Cookies can be stored for up to two weeks.

Great Christmas recipe, except I used yellow M&m's in the middle instead of icing. Just push in center when cookies come out of oven.

These were very time consuming -- which I knew they would be ahead of time. That's not what I'm complaining about. My cookies looked nothing like the ones in the picture. I more than doubled the amount of red food coloring, and still wound up with pink cookies rather than red ones. Also, it is rather difficut to make slits in one-inch balls of dough that are spaced one-inch apart other one-inch balls of dough on a baking sheet. My cookies did not flatten like the ones in the picture, but stayed in more or less the shape of a ball. I had to bake much longer than the recipe instructed. The end result was a very unattactive, and not too tasty cookie. I didn't even bother with the yellow dots. No one raved about these cookies. One friend said, "I kind of liked them," and I gave him the remainder of the batch. Maybe I did something wrong? I followed the recipe to a T. I might try them again next Christmas to find out for sure.

I thought these cookies tasted really good but they didn't look nearly as attractive as in the picture. The dough is hard to work with. I think next time I will try a cookie press.
