Corn tortillas rolled up with shredded chicken and 2 kinds of cheese, and then served with a zesty salsa verde. This dish can also be made with cooked pork or beef.

The filling alone--a rich concoction of chicken, onion, garlic, raisins, walnuts, cilantro and tomato paste--is intriguing enough. But then these stuffed poblano chiles are submerged in the thickest goat cheese walnut sauce you can imagine!

No need to turn the oven on with this recipe that a chef gave me years ago. It was a popular item at the restaurant, always requested and it is still my family and friends favorite today! I have added my own special touches to make it even better. This can also be served over rice instead of tortillas.

I've begun making my enchiladas casserole style, which saves a lot time, not to mention burned fingers. :) However, everyone still raves over my enchiladas, and this recipe recently earned a round of applause when I made them on a skiing holiday. The sauce is actually a modified Alfredo recipe and is also great over fajitas.

No tomatoes here, just a satisfying cheese and chicken filling with a creamy sauce over all.
