Poached Tuna Steaks

INGREDIENTS

  • 1 1/2 cups water
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon cayenne pepper
  • salt and pepper to taste
  • 2 (4 ounce) albacore tuna steaks
  • 3 kumquats - rinsed, seeded and sliced
  • 1/3 cup chopped fresh cilantro

DIRECTIONS

  1. In a medium saucepan over medium heat, mix water, lemon juice, and cayenne pepper. Season with salt and pepper. Bring to a gentle boil.
  2. Place tuna steaks into the mixture, and sprinkle with kumquats and cilantro. Cook 15 minutes, until fish is easily flaked with a fork.

This was the first time I had made tuna steaks - quite tasty! I couldn't find kumquats so I used a small orange, sliced with the peel, to top the steaks while they were cooking. With the fresh cilantro, it smelled wonderful while it was cooking.

This was wonderful, just be very careful not to overcook the tuna.

This recipe was sort of a disappointment. Perhaps I didn't watch it too closely, but the steaks came out too dry.
