Poached Orange Pears

These pears are very simple to prepare, but so elegant, assures Edna Lee of Greeley, Colorado. I love to serve them when fresh raspberries are in season. They make a beautiful presentation for special occasions and are always well liked by both young and old. TIP: I've occasionally used home-canned pear halves and no one ever knows the difference, Edna says.

Sweet Chocolate Pears

Luscious ripe pears are slowly baked in a sweet bath of orange juice and sugar, then served with their own orange sauce and a drizzle of melted chocolate. For best presentation choose firm pears, do not remove the stem, and core the pear from the bottom.

My grandmother would use food coloring to make red and green pears only at Christmastime, and I enjoy carrying on her tradition. When I prepare this for a salad, I fill the centers with fresh fruit, fruit cocktail or cottage cheese. As a dessert, there are more options...a dab of whipping cream with a cherry on top, a drizzle of chocolate on top of the whipped cream or a scoop of sherbet in a contrasting color. -Mary Selner, Green Bay, Wisconsin
