Original Recipe Yield 1 - 10 inch tube pan
 

Ingredients

  • 2 cups all-purpose flour
  • 2 cups white sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 cup vegetable oil
  • 3 eggs
  • 2 (4 ounce) jars plum baby food
  • 1 tablespoon red food coloring
  • 1 cup chopped black walnuts
  • 1 cup confectioners' sugar
  • 1 tablespoon lemon juice

Directions

  1. Preheat oven to 300 degrees F (150 degrees C). Grease and flour a 10 inch tube pan.
  2. In a large bowl mix together the flour, sugar, salt, baking powder, baking soda, cinnamon and cloves. Make a well in the center and pour in the oil, eggs, baby food and red food coloring. Mix well, then stir in chopped walnuts.
  3. Pour batter into prepared pan. Bake in the preheated oven for 70 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove cake from pan while still hot and frost immediately.
  4. To make the Frosting: In a small bowl combine 1 cup confectioners sugar and 1 tablespoon lemon juice. Stir until smooth.
