Ham and Onion Pie

The filling for this double-crust pie is hearty and delicious. Lots of Jarlsberg cheese and sliced baking potatoes are layered with ham, onion and garlic. A rich egg-cream mixture is then poured over the layers and the finished pie is popped into the oven to bake up crusty brown.

I've been making this pie for a few years now. I like to vary the vegetables and meat depending on what I have on hand. I've made it with leftover turkey, sausage and lamb roast. In summer, it's a perfect brunch meal with a salad; in winter, add a loaf of homemade bread for a great dinner.

The crust is actually herbed mushrooms! It's also filled with a great tasting herbed ham and cheese custard. I created this recipe when I found myself with an abundance of mushrooms and leftover ham in the fridge and an urge to cook something different for lunch! It turned out to be a savory sensation. 

Apple Pie Ham

Sweetened apples, mustard, barbeque sauce and honey make a delightful ham glaze. This ham recipe is an old favorite in my husband's family. The sauce it is cooked in is delicious served with the ham as well.

This quick-fix pot pie can be whipped up in minutes and tastes like you spent hours in the kitchen. Cooked, diced chicken breasts are combined with condensed cream of chicken soup and mixed veggies. Pour into a prepared pie shell, cover with a round of pastry, and bake. Makes eight generous servings.
