Pizza Soup II

"This is a very good soup; it tastes just like pizza! Garnish with mozzarella cheese."

INGREDIENTS

  • 1 1/4 cups fresh sliced mushrooms
  • 1/2 cup finely diced onion
  • 1 teaspoon vegetable oil
  • 2 cups water
  • 15 ounces pizza sauce
  • 8 ounces sliced pepperoni sausage, each slice cut in half
  • 1 cup chopped tomatoes
  • 1/2 cup chopped, cooked Italian sausage
  • 1/4 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese

DIRECTIONS

  1. In a large saucepan, heat oil over medium heat. Saute mushrooms and onion in oil for 2 to 3 minutes, or until tender.
  2. Mix in water, pizza sauce, pepperoni, tomatoes, sausage and Italian seasoning. Cover, and bring to a boil. Reduce heat; cover, and simmer for 20 minutes, stirring occasionally.
  3. Before serving, stir in Parmesan cheese. Garnish with mozzarella cheese.

This is it! I frequent a resturant that serves pizza soup and this is the closest recipe I've found for it. I added chopped green pepper and used pizza sausage. I also made my own pizza sauce, using "easy pizza sauce II" (from this site). I realize that this may be an aquired taste, but I think it's great, I can't wait to make it for my brother...he's gonna flip! Thanks Pam!

This recipe was fantastic! Everyone loved it! I added green and red bell pepper and black olives, and I also seasoned with garlic pepper, garlic salt and basil in addition to the Italian seasoning. It had the perfect flavor and was very filling. I will definitely make this again!
