Pizza Soup I

INGREDIENTS

  • 1 tablespoon vegetable oil
  • 1/2 cup fresh sliced mushrooms
  • 1 onion, chopped
  • 1/4 cup chopped green bell pepper
  • 2 (14.5 ounce) cans stewed tomatoes
  • 8 ounces sliced pepperoni sausage
  • 1 cup beef stock
  • 1/2 teaspoon dried basil
  • 1 cup shredded mozzarella cheese

DIRECTIONS

  1. Heat oil in a saucepan over medium heat. Stir-fry onions, mushrooms, and green pepper until soft but not brown.
  2. Add tomatoes, stock, pepperoni ,and basil. Cook until heated through.
  3. Sprinkle cheese over each bowl, and broil to melt.

Tasted very good. The soupy broth was quite nice. I used 1 1/3 pounds of mild italian sausage instead of pepperoni, added a few sprinkles of oregano leaves, increased the broth to 2 cans and added 1 cup of water. The melted cheese was a nice touch too. The only bad thing was that I forgot to let it cool down! It was interesting and unqiue, but this will not be a part of my regular rotation. Good recipe Lise

I'll be honest, this soup is nothing to what I am used to but it is pretty good. I used 1 lb of mild italian sausage and just a few slices of pepperoni. Due to the increase in meat, I increased the beef broth to 1 1/2 cups and added (per other suggestions) 1 14oz can pizza sauce. This thicken the soup as others suggested and made it taste just like a pizza. It is good and maybe if I keep making it, the recipe will grow on me more.

Very easy to make and good. I used turkey pepperoni and omitted the mushrooms.
