Pizza Salad I

Except for the crust, it 's pizza! It 's got tomato sauce and lots of cheese, and salami and olives and herbs, and a great dressing that is drizzled over everything before it 's served.

I like to serve this refreshing salad during the summer when my family craves pizza but I don't want to heat up the house by turning on the oven. It's so popular at potlucks that I always bring home an empty bowl. -Cathy Riebschlager, Hordville, Nebraska

For this recipe use a ready-to-top prepared pizza crust because of the extra seasonings and cheese already baked onto the crust. The spinach dip adds a unique flavor to this summer afternoon meal.

Wow, what a great idea this is. Start with an already prepared pizza crust and add mixed baby greens, sliced or shredded chicken and a good pour of Caesar salad dressing. If you like, you can add a dab of your favorite barbecue sauce before you drizzle on the dressing.

Vermicelli Salad

This salad couldn 't be easier to fix. The dressing is bottled but zipped up with a bit of salad seasoning mix. The pasta only takes moments to cook and while it 's doing that you can combine the chopped tomato, bell pepper, red onion, and black olives. Refrigerate overnight to mingle all the nice flavors. Serves six.

The veggies match the colors in the tri-colored pasta. And the dressing is real zesty and spicy. So when all three - pasta, veggies and dressing - come together, you have a festive, tasty and beautiful salad for six.

This fun salad has two dressings - Italian and creamy Caesar. And with the exception of some diced bell pepper and onion, it 's all pasta. Serves twelve.

The vinaigrette is absolutely smashing. You'll want to just eat it with a spoon, but save some for the salad. Blackened tomatoes are blended with good things like balsamic vinegar, honey, mustard, tomato paste, garlic, and red wine vinegar, and then splashed on the waiting salad. Serves six.
