baked for st patty's day supper club. mhy club went wild for it. i also used and extra pudding. i used sugar free pudding and light yellow caked batter to go easy on the calories. everyone asked for the recipe

I also added extra pudding. I added only 1/2 of a box extra. The batter was very thick so I added a little milk to make it pourable. It was delicious. Like other reviewers, I thought it was more cake-like than most quick breads, but yummy none the less. It is perfect for a Christmas giveaway

I like hearty breads and this is a light enough bread that wont hit your stomach like a brick but soooo flavorful you only need one...or two. :) LAOVED it

This was a huge hit! My mom loved it! I did make a few changes though. First, I added an extra package of instant pistachio pudding mix, because 1 reviewer said the pistachio flavoring wasn't that strong. I also substituted pistachios for the pecans, because it made more sense in my head. Since I was using 2 large loaves instead of small loaves, I put some of the topping in the middle of the loaf. I added half the batter then added the topping then put filled the pans up the rest of the way.

This was very good, but after it cooled, it lost the strong pistachio flavor and tasted more like yellow cake. It was very moist. I only had large loaf pans, so I used two of those and increased the baking time. I will make this again, but will not tout it as "pistachio bread" because the pistachio flavor isn't that strong.

Very moist! Easy and quick to make. I did not have 5 mini loaf pans so I used one mini and 1 regular. Had to increase cook time for large loaf. Will make again soon!
