This was SO yummy. I used chicken tenders, so I only needed to bake about 16 minutes. I used Italian-style breadcrumbs, so I didn't add any salt to the honey, dijon, olive oil step...just freshly ground pepper. I pulsed the pistachios in the food processor for just a few seconds (still chunky, but not quite breadcrumb consistency). I, too, bought the Pistachio Lovers can of mixed nuts and picked out the pistachios. Cheaper and you don't have to crack open each one. This went great with mashed potatoes. Comes together quickly...would make this any night!
