I really liked this recipe. The butter gives it a nice creamy texture. Few changes though. I used crushed pineapple instead of chuncks and I had about a 1/2 c to 1 cup leftover pure pumpkin from another recipe. I mixed the pumpkin with the pineapple, butter, sugar, cinnamon and poured over the sliced potatoes.

This was an easy, quick, and delicious recipe that even all my boys enjoyed. I made two changes, first I used fresh pineapple. You can't beat the flavor of fresh! Just cut chunks, place in a strainer over a bowl to collect the juice needed. The second change was to cut the amount of sugar in half. Hope these tips help. Try this recipe, you'll love it.

Everone I serve this recipe to says it is the best they have ever tasted! The combination of pineapple, cinnamon and fresh sweet potatoes wins praise every time!

this is a pretty good recipe. I also used apples, kind of going off of the smushed apples and sweet potato recipe too. the only problem i have with this dish is the amount of liquid-the corn starch/butter/sugar that goes over the sweet potato is a lot...and when i made it ended up with liquid at the bottom of the dish. Did this happen to anyone else?
