We loved this! I used fresh pineapple that I blended to 20 oz. of puree in a vitamix. I also added some coconut. This is a definite "make again" at our house. Thank you Barbara for the GREAT recipe.

Very good. I halfed the recipe. I mixed this up with fresh pineapple and without walnuts and frozen it solid. I then broke up the pieces and ran it through my Vitamix on frozen setting. Which resulted in a perfect creamy ice cream like consistency. I stirred in the walnuts afterwards. The buttermilk made this and the pineapple was subtle. The walnut gave a great add to the mix.

This wasn't awful, but I wouldn't make it again. Something (maybe the buttermilk) gave it a slightly sour taste that I couldn't get over.

i didn't like it at all, luckily it didn't go to waste becasue somehow 4 other people in my house liked it so that kind of worked out. It was way too bitter, and was not creamy once frozen. Sorry but won't be making this any time soon... I guess if u like plain buttermilk than you'll like this.

What a surprise - this is so delicious. I never would've tried it; but needed to use up buttermilk and had all the makings for the recipe. I can't quit eating it! I made Buttermilk Pound Cake II also from allrecipes and we ate them together. I added 1/2 teaspoon of coconut extract just because I had it. Mine took substantially longer than 3 hours total to freeze, it was more like a delicious creamy milkshake at 3 hours. I froze it in a long flat Tupperware and we just scooped the most frozen parts to eat last night saving the rest for today. Don't be afraid to try - this one is a keeper!

Excellent flavor, but ours came out very hard, making it difficult to serve. I'm thinking I didn't drain the pineapple well enough. Next time I'll make sure to drain the can fully, hopefully eliminating some of the ice.
