I think this recipe has great potential, but I'm going to have to play around with it a bit before I can say I truly like it. I used fresh pineapple, finely chopped, and omitted the coconut. Surprisingly I did not like the combination of a fruit crisp crust with the pineapple at all - they just didn't seem to belong on the same spoon! I think the coconut would have helped that, adding a tropical touch to the topping. I'll make again, but will tweak a bit - maybe try nuts on top. And if I use fresh pineapple again I would probably add sugar or another sweeter fruit as my pineapple mixture turned out very tart.

This dessert was not bad. It seems very healthy, and a bit of a lighter dessert. I think it would be good with Cool-whip. I didn't add coconut (because I really don't care for it) and it turned out fine. If you are really looking to impress someone, this may not be the best dish. But if you want to cook up something quick, and have a hankering for something sweet, this works. I think you could easily modify it also, and put any drained canned fruit as a substitute for pineapple. In that respect, this recipe is great when you don't have too many ingredients in your cupboard.

This is kind of good. The author stated she made changes to the original recipe and decreased the sugar. She made it healthier and that is a good thing. But if you like a decadent dessert this one is not. If I make it again I will increase the sugar and butter and flour. The raisins are optional; I didn't think they added much.
