I made the cake without the pecans (didn't have any) and with store-bought cream cheese frosting. Cake was dense and moist and delicious! I could see topping it with shredded coconut.

My friend made this cake as part of the dessert table for her piano recital and the cake was AMAZING!!! I still can't believe that there's no butter or oil in this cake. I'm going to make it for Christmas dinner. WINNER!!
