Made this cake recently for a meeting. Everyone loved and most wanted the recipe. I am making it again this weekend for our pot luck with our camping group.

Great recipe. Next time I will crush/blend the oranges more because I prefer a smoother overall texture. Took advice from reviews and used 1 tsp. of orange extract. I also made sure to really coat the first layer with frosting. It turned out great! Just look at my pic and you can see how much to put in between the layers.

I made this cake for my mother's 85th birthday party. I used the mandarin syrup as part of the water measurement to make the cake. I also did not drain the pineapple when I made the frosting. Next time, I will cut each layer in half, making a 4-layer cake. There was plenty of frosting to do this and still frost around the outside. Delicious cake. ***I've discovered that I prefer to eat this cake 2 days after making it. It is more moist.

I have never made this kind of cake before but someone requested it so I thought I'd give it a try. I made the first cake with the yellow cake and it was ok. I made the second cake with a lemon mix and I thought it was much better. Seemed more light and refreshing. When I first made the icing, I wasn't sure about it as the pudding gave it a gritty taste. I added a couple of tablespoons of pineapple juice and it made it less gritty. My husband thought it was really good and he normally doesn't like fruity cakes. I would make this again but might tweak it more to my preferences.

I loved this cake as well as my family! I have added this recipe to my collection. I have also made this same recipe but with a lemon flavored cake mix; which makes this rich moist and fruity tasting cake even brighter! It's a keeper for me. Thanks for the recipe!

This was AMAZING. I followed someone's advice and added a tsp. of orange extract to the cake batter. Other than that I followed the recipe. My whole family loved it!! It made a great Easter Dessert.
