I used Jasmine rice and followed directions as written. The house smelled wonderful while cooking. Everyone loved this; and was great as leftovers. Thanks so much for sharing. Will be making this again.

Surprised how tasty this was! I actually cooked the rice in the juice I drained from the pineapple and that made the flavor so bright and sweet! I cut the sugar a bit and tossed some bell pepper into the mix. I also made it all on the stovetop with a little olive oil and it had a bit of a fried rice texture. The kids gobbled it up. Thanks so much!

I took note of some of the other reviews and modified this a bit. I used 7 cups of rice (what i had leftover), 3 cups ham, 1 540ml can of pineapple tidbits and juice, 1/2 cup brown sugar, 1 tbsp vinegar instead of the lemon juice and 1 tbsp prepared mustard instead of ground mustard. I also added some finely chopped onion(about half a small onion) and some salt and pepper to taste. This recipe has an awesome taste to it! The brown sugar adds just enough sweetness to the pineapple without being too sweet to eat(although, if using the 2 cups of rice it would probably be way too sweet). I do agree with some of the others.. this recipe tastes even better as leftovers! Thank you for sharing!

My entire family enjoyed it. When it came to leftovers, I whipped up yellow corn meal and poured on top of the leftover meal, and baked right in the same pan. It came out smelling and tasting like corn dogs!

I added 1/4 teaspoon of cinnamon. My husband loved this. This will be on my list of receipies to have the next time I buy a whole ham.

Love it! Followed it exactly. Used leftover Easter Ham plus brown rice. Yummo. I made it to freeze into individual servings for work this week. Tastes great and the smell is so wonderful as well. Many people asked what it was since it smelled so good!
