INGREDIENTS
1 (20 ounce) can pineapple tidbits
1/2 cup mayonnaise*
1 teaspoon salt
1 teaspoon prepared mustard
1/4 teaspoon pepper
3 cups cooked rice
2 cups cubed fully cooked ham
1 cup chopped green pepper
1 1/2 cups shredded Swiss cheese, divided
1/3 cup chopped onion

DIRECTIONS
Drain the pineapple, reserving 1/2 cup juice; set pineapple aside. in a large bowl, combine the mayonnaise, salt, mustard, pepper and reserved pineapple juice; mix well. Fold in the rice, ham, green pepper, 1 cup of Swiss cheese, onion and pineapple.
Transfer to a greased 2-qt. baking dish. Cover and bake at 350 degrees F for 30 minutes. Sprinkle with remaining cheese. Bake, uncovered, for 10 minutes or until heated through and the cheese is melted.
FOOTNOTE
Reduced-fat or fat-free mayonnaise may not be substituted for regular mayonnaise in this recipe.

This turned out very well, and my finicky husband liked it too. I used a half teaspoon of horseradish sauce, for extra flavor. I also used mozzarrella cheese since that was what I had on hand. My husband said I should definitely make this again, while the kids rated it a 5 on a scale of 1 to 10.

A little odd, but good. I used brown rice because I like it and I think the nutty/chewy-ness did very well in this recipe. I wish I hadn’t put the bell pepper in it out of personal preference and subbed something else (mushrooms maybe?). Will make again when I have a surplus of ham—without the bell pepper.

I have been making this recipe for several years now and all my family loves it! We have added it to our family favorites recipe book. I always use red onions. I like the color and the flavor better. I also found the best way to mix is to put everything in a large ziplock bag and my kids get to 'squish' it. Thanks for the fav! PS! This reheats very well the next day too! I almost always double the recipe for leftovers!

I actually would have given this 4 1/2 stars. It was very good, but it needed a little oomph. I used brown rice, and it came out just as well. It is a great way to use up Easter ham, and it does taste a lot like a ham and pineapple pizza. Next time I would add a little more salt, and some red pepper flakes for a little zing. We will make it again.

Although I thought the recipe was o.k., and an interesting change, my family did not care for it. They said there were too many "conflicting" flavors with the peppers, onions and pineapple.

Please, for the love of all that is good in this world...do not make this! Do not feed it to your kids! Those who liked this have no taste...maybe they were from a third world nation and were starving. They needed something, no matter what it tasted like. You know, these basic ingredients taste great on a pizza, but simply do not work here...trust me on this...don't waste the ham and pineapple! Make a ham sammich! Disgusting...gross...you should have seen the look on my son's face! AAAAAA!
