Made it for my parents who are diabetic, I spread lite cool whip on top and sprinkled it with walnuts mmm even I enjoyed it

This was really good. I did change a couple things. I used a shortbread crust, french vanilla pudding, unsweetened coconut and toasted it, and I added macadamia nuts that were also toasted. I didn't use cream as I didn't think it needed it.
