Pineapple Chocolate Chip Cookies

Ingredients

  • 1 cup shortening
  • 1 cup sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 2 (8 ounce) cans crushed pineapple, drained
  • 2 teaspoons vanilla extract
  • 4 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1 cup chopped walnuts

Directions

  1. In a mixing bowl, cream shortening and sugars. Add eggs, one at a time, beating well after each addition. Beat in pineapple and vanilla. Combine the flour, baking soda, baking powder and salt; gradually add to creamed mixture. Stir in chocolate chops and walnuts if desired.
  2. Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Press down lightly. Bake at 375 degrees F for 10-12 minutes or until lightly browned. Remove to wire racks to cool.
